Our authentic sourdough range

When you buy “sourdough” bread from another bakery, are you getting the real deal? Here’s what we mean by authentic sourdough:

Nothing artificial – we use no bakers’ yeast or artificial additives such as dough improvers and preservatives

Woodfired – All our bread and pastries are baked in a 120 year wood-fired scotch oven - one of only about six still operating in Australia

100% organic – Our simple doughs of organic flours, salt and water are transformed by the alchemy of natural fermentation and wood-fired baking into loaves with outstanding colour, texture and flavour

Handmade – All our breads and pastries are shaped by hand using traditional techniques

Standard sourdough range

Our standard range is available Tuesday to Sunday:

Red Head

Traditional hi-tin sandwich loaf with deeply caramelised crust – biodynamic stone ground and organic wheat flours made on a rye leaven, salt & water

Blonde

A Vienna loaf with plenty of substance - biodynamic stone ground and organic wheat flours made on a rye leaven, salt & water, baked on the floor of the scotch oven

Raven*

This Bavarian black beauty is 100% rye (i.e. wheat free) – biodynamic stone ground dark & light rye flours, salt & water

Stubble

This rugged multigrain is the ultimate sandwich and toasting loaf – linseeds, sesame & sunflower seeds, biodynamic stone ground & organic wheat flours made on a rye leaven, salt & water

Brunette

This sesame seed encrusted wholemeal loaf is pure goodness – biodynamic stone ground wholewheat flour made on a rye leaven, salt & water

Carmen Miranda

A lush, spicy fruit loaf – organic sultanas, sun muscats, currants and apricots, cinnamon, ginger, nutmeg, pimento, cloves, biodynamic stone ground & organic wheat flours made on a rye leaven, salt & water

Rug

Focaccia with onions, rosemary, Mt Zero Olive Oil and rock salt

Sole-baked potato cobb loaf – organic potato roasted and mashed, biodynamic stoneground and organic wheat flours made on a rye leaven, biodynamic milk, salt and water

Sole-baked olive cobb loaf – Mt Zero Kalamata olives and olive oil, biodynamic stone ground dark & light rye flours, organic potatoes mashed, salt & water

Hellroggen

Sole-baked light rye and caraway cobb loaf – biodynamic stone ground & organic rye and wheat flours, organic potatoes mashed, caraway seeds, salt & water

Pumpkin Thatch

Sole-baked pumpkin cobb loaf– pumpkin, biodynamic stone ground and organic wheat flours made on a rye leaven, organic potatoes mashed, salt & water

Fri

Flaxen

Based on an ancient grain, this loaf is wheat free: Powlett Hill biodynamic spelt flour made on a rye leaven, salt & water, rolled in oats
