Part of our annual maintenance closure was to give our beautiful old scotch oven some tlc.
The oven floor and dome are holding up well, but the flue damper, which was put in as part of recommissioning the oven over 10 years ago, had become dislodged. So out it came and off to Neil at Tait Decorative Iron in Castlemaine it went for some improvements. These included increasing the damper aperture to give us more draw.
Then came the moment to refire the oven - using 1 metre lengths of sustainably harvested plantation sugar gum.
We'll fire the oven again tomorrow, and then again on Friday ahead of a big farmers market bake.
Cafe open again 8am Saturday morning 14th feb - Valentine's Day.
