Green Beard
We want our grandkids to live on a healthy planet and be able to enjoy good sourdough bread too. So here’s what we do at Red Beard to make sure we don’t bake the planet.
We reduce our greenhouse emissions by:
- buying electricity from renewable sources
(see www.greenpower.gov.au)
- firing our oven with sustainable plantation hardwood (sugar gum from Western Victoria) – this avoids the greenhouse emissions from standard baking ovens powered with coal-fired electricity
- offsetting our transport emissions by planting trees.
We support sustainable agriculture by choosing (where possible):
- organic ingredients (to conserve the Earth)
- locally grown ingredients (to reduce energy from transport)
- seasonal ingredients (to reduce energy from storage)
- to grow our own herbs.
We support the regional economy by:
- employing locals
- selling our bread only in Central Victoria
- giving preference to local suppliers
- supporting the farmers’ market movement.
